
I love making this loaf! Partly because I never eat all the bananas I buy before they turn, and partly because it’s like dessert. But healthy. So I don’t feel guilty when I eat the whole damn thing. I got this recipe off of Pinterest, and then built off of it to make it extra yummy.
Ingredients:
- I banana
- 1/4 cup oats
- 1 tsp vanilla extract
- 1 egg
- peeled and diced apple (I usually to 1/2 + apple, this is per your own preference)
- frozen (or fresh, whatever you have) blueberries
- any other fruit or chocolate chip of your choosing

Instructions:
- Preheat oven to 350 degrees.
- Grease loaf pan.
- Peel banana(s) and mash them up with a fork.
- Add all other ingredients, stir together. No need to use a beater, the fork you used to mash the bananas works just fine. And fewer dishes.
- Put your mix in the loaf pan, bake for about 40 minutes (depending on your oven start checking at 30 minutes).
Notes:
I usually double or triple this recipe depending on how many brown bananas I have. I also just throw together what is on hand. If I have apples I use those, if not I dig through the freezer and find some frozen fruit. I want to try peaches in this recipe at some point! I think those would make a delicious summer loaf. For extra goodness, I will spread almond butter on a slice. Be sure not to overcook this recipe, I prefer mine to be pretty moist, so just keep your eye on it and check it periodically. Anyway, enjoy this quick, easy loaf! And spend those calories on better things. Like wine.
